Chewy Chocolate Peanut Butter Protein Bars


When I want to switch it up from store-bought protein bars, I like to try my hand at making my own. And these are the best I've made to date, by far. Not only are they macro-friendly, meaning you're getting a considerable serving of carbs, protein, and healthy fat in each bar, but the prep time is next to nothing, they have a delicious sweet, nutty flavor, and the texture is nice and chewy, which I personally prefer in a protein bar. Oh, and peanut butter. Peanut butter makes everything better in my world. This recipe yields nine square bars, perfect to grab for an on-the-go breakfast or snack.

What You'll Need:

1 1/2 cup steel cut oats, uncooked
2 1/2 scoops vanilla protein powder 
2 tbsp flaxseeds
1 tbsp brown sugar
1/4 cup peanut butter
1/4 cup water
1/2 tbsp vanilla extract
2 tbsp chocolate chips
2 tbsp peanut butter chips

Instructions:

In a large bowl, combine oats, protein powder, brown sugar, and flaxseeds. In a separate bowl, mix peanut butter, water, and vanilla. Stir together wet and dry ingredients until you have a crumble consistency that's somewhat sticky. Add chocolate and peanut butter chips. Press mixture into an 8 inch pan and place in freezer for 1 hour. After the hour's up, remove, cut, and enjoy!

Macros (per bar):

Protein: 11 g
Carbs: 27 g
Fat: 9 g

Feel free to customize this recipe by adding dried fruit, nuts, coconut flakes, or any other nibbles you like instead of the chocolate and peanut butter chips. Or, in the spirit of the holidays, try tossing in some peppermint bark! Yum!

P.S. I store these in an airtight container in the fridge, and they keep for about a week or so.
