Lemon Butter Garlic Scallops

When it comes to dinner, I always try to prepare something that packs a lot of protein to make sure I'm hitting my macros. While chicken breast usually fits the bill, you can only eat so much chicken and veggies in one week, ya know? I'm always looking for ways to switch it up, and these scallops are the perfect stand-in. Not only are scallops rich in nutrients like vitamin B12, magnesium, and potassium, but they're also a great source of omega 3-fatty acids and protein. Plus, the prep and cook time combined for this recipe is less than 10 minutes!

Pair these sweet little nuggets with a zesty lemon butter garlic sauce and you're golden  literally. Here's how to make 'em:

What You'll Need:

1 lb scallops, fresh (wild if possible)*
3 tbsp unsalted butter
2 cloves garlic, minced
1 large lemon
garlic salt and pepper, to taste

*I picked mine up at the local Whole Foods Market


1. Melt 1 tablespoon of butter in a pan over medium-high heat.
2. Season scallops with desired amount of garlic salt and pepper.
3. Carefully place scallops into the pan and sear for 1-2 minutes on each side, or until golden brown. Remove and keep warm.
4. Melt remaining 2 tablespoons of butter in the same pan.
5. Add garlic and stir for 1-2 minutes until flagrant.
6. Squeeze in juice from the lemon.
7. Add garlic salt and pepper to taste.
9. Pour the sauce over the scallops and enjoy!

To add some color and brighten the flavor even more, finish with chopped parsley.
