Easy Cauliflower Rice Burrito Bowl

I love me some Mexican food, but between the rice, meat, cheese, and sour cream, the macros (and calories) can add up quickly. So, imagine my excitement when I came across this alternative to the burrito bowl! High in protein, low in carbohydrates and fats, super easy to make, and just as delicious as the real deal. The star ingredient here is the cauliflower, which is grated into rice-size pieces  a great low-carb substitute for white rice. Another key is using a lean protein – I typically use 92/8 ground beef, but you can also use ground chicken or turkey  and non-fat Greek yogurt as an alternative to sour cream.

Feel free to switch up the spices to taste, but I personally like going heavy on the cumin, which lends a nice nutty, peppery flavor. And it doesn't hurt that cumin has a laundry list of health benefits, including its ability to detoxify the body, aid digestion, and boost the immune system. The red pepper has detoxifying properties, too, and gives the dish a nice kick.

What You'll Need:

1/2 cup riced cauliflower (Trader Joe's sells it already riced in a bag, holla!)
1/2 cup lean ground beef (or lean protein of your choice)
1 tsp garlic salt
1 tsp ground cumin
1 tsp ground red pepper (Cayenne)
1 oz 2% shredded cheddar cheese
2 tbsp pico de gallo (or hot salsa verde for some extra heat)
1 oz non-fat Greek yogurt
1/2 cup shredded cabbage


Saute the cauliflower rice with a little coconut oil in a pan over medium heat for 2-3 minutes. Add ground beef (pre-cooked) and the seasonings, and stir for another 2-3 minutes. Transfer to serving bowl. While the mixture is still hot, toss in the cheese. Top with pico de gallo, yogurt and shredded cabbage. Enjoy as is or mix it all up like I do!
